Happy Easter!

On Monday, I made Grandma Cleone's Macaroni and Shrimp Salad.

On Wednesday, I made a no carb Pepperoni Pizza, using Parmesan cheese and cream cheese as the crust. I watched the movie, Hello Dolly!. I also have been watching early One Tree Hill episodes on DVD and Soapnet, because the series aired its final episode on Wednesday. I have watched the show from the first episode, that aired nine seasons ago. It's pretty incredible for a good show that has low ratings to last so long.

Mom bought a food dehydrator on Thursday and has dried banana, mango, strawberry, and pineapple slices in it.

On Friday, we woke up to Snow. It was pretty windy as well. I made Enchilada Pasta, with penne, hamburger, enchilada sauce, tomatoes, and cheese.

On Saturday, We went to the Mall. It seems weird to see FYE and Deseret Book gone. As mom was riding her scooter through the mall entrance, the automatic door hit her and scraped her knee. Dad had to go to the reception of a co-worker's son at the Timbermine. He got the couple a gift card for Walmart. Afterwards we went to the Sizzler and then went and got groceries at Macey's.

Sunday was Easter. For dinner, we had ham, funeral potatoes, asparagus, and deviled eggs. I made a molten lava cake and served it with butter pecan ice cream for dessert. We tried to watch the movie, Like Crazy, but it was boring. I read the book, The Mermaid Chair by Sue Monk Kidd.

My brother, Ryan and his girlfriend Sara spent Easter weekend in Calgary, Canada. Sara's parents are serving a mission there, so Ryan went up there to meet them and ask her dad for permission to marry Sara before they get officially engaged. Ryan showed us the emerald cut engagement ring to us when we were in California in March and it is a gorgeous ring.

Today, I watched the movie version of The Mermaid Chair. I went into the D.I. while Mom was talking to her brother on her cellphone out in the car. I bought some books and bought Mom some figurines and a Mickey Pumpkin.
